Ingredients:
- 2 cups regular rolled oats
- 2 ripe bananas
- 2 eggs
- 1 cup full fat (3.5-4%) plain yogurt
- 1/4 cup maple syrup
- 11/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 11/2 teaspoons vanilla extract
- 11/2 cups blueberries (defrosted if using frozen)
Directions:
- Defrost berries in advance if using frozen.
- Preheat oven to 375 ̊F and line a muffin tray with muffin cups or grease with coconut oil.
- Mash the bananas with a fork. Add all of the ingredients except the berries to a high powered blender or food processor. Blend all of the ingredients together until everything is mixed well then stir in the berries and pour in to muffin cups.
- Bake for 20-22 minutes (depending on your oven)
