Easy Recipe: Blueberry Oatmeal Blender Muffins

Serves 12

Ingredients:

  • 2 cups regular rolled oats 
  • 2 ripe bananas
  • 2 eggs
  • 1 cup full fat (3.5-4%) plain yogurt 
  • 1/4 cup maple syrup
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 11/2 teaspoons vanilla extract
  • 11/2 cups blueberries (defrosted if using frozen)

Directions:

  1. Defrost berries in advance if using frozen.
  2. Preheat oven to 375 ̊F and line a muffin tray with muffin cups or grease with coconut oil.
  3. Mash the bananas with a fork. Add all of the ingredients except the berries to a high powered blender or food processor. Blend all of the ingredients together until everything is mixed well then stir in the berries and pour in to muffin cups.
  4. Bake for 20-22 minutes (depending on your oven)
